Jean Farrar, who has lectured on nutrition
at Eisenhower Hospital in Rancho Mirage, California, and
the College of the Desert in Palm Desert, California, recently
shared some of her excellent recipes with us.
The concentrate used to make these delicious
popsicles is a blend of raspberry juice, cranberry juice,
grape juice, sweetener, and vitamin C. The cranberry punch
concentrate you buy has all of these ingredients. Fruit
juice concentrate gives a powerful, sweet taste.
12 ounces (360 g) of frozen cranberry punch concentrate,
unsweetened
1 12-ounce (360 g) package plain extra firm tofu
In a food processor or blender, combine ingredients and
process one to two minutes until smooth. Pour into popsicle
mold, insert sticks, and freeze until solid. Makes 2 1/2
cups (625 ml) of mix.

Add 1 tablespoon maple syrup for sweetener.

Other sweeteners will work as well. Mango,
banana or just-picked berries are great choices that make
the popsicles even creamier.

You can use soy milk instead of regular
tofu because it forms more ice crystals.

You can also use 3/4 cup (188 ml) mixed
brown rice flour, brown rice bran and soy flour for thicker
Soysicles.
